The independent dining guide takes a deliberately selective approach, choosing just three restaurants in each of 14 Canadian cities.
TORONTO - PennZone -- Brévant Guide, a new independent Canadian restaurant guide, has launched with a simple premise: rather than publishing sprawling rankings of dozens or hundreds of restaurants, the guide selects just three restaurants it believes represent essential dining experiences in each featured Canadian city.
Brévant Guide launches with coverage of 14 cities across Canada: Calgary, Charlottetown, Edmonton, Halifax, Moncton, Montréal, Ottawa, Québec City, Saskatoon, St. John's, Toronto, Vancouver, Victoria and Winnipeg.
Each city receives only three selections.
The restaurants are not ranked first, second or third. Instead, the guide presents three establishments that distinguish themselves through a combination of culinary identity, execution, creativity, consistency and their contribution to the dining culture of their city.

The intentionally small number of selections is central to the Brévant philosophy.
Restaurant guides have increasingly become larger, with rankings that can include dozens or even hundreds of establishments. Brévant takes the opposite approach. Its objective is not to catalogue every good restaurant in a destination, but to make a difficult editorial choice about which restaurants are most worth knowing.
For travellers and local diners alike, the format is designed to answer a simple question: If you had only a few opportunities to dine in a city, where should you go?
By limiting every city to three restaurants, Brévant aims to make each selection meaningful. Inclusion itself is the distinction. There is no hierarchy among the three restaurants selected for a city.
The guide also places restaurants from Canada's largest dining destinations alongside those operating in smaller cities, reflecting the increasingly broad geographic range of ambitious and distinctive dining across the country.

Brévant Guide plans to continue expanding its coverage while periodically reviewing existing selections as restaurants open, close and evolve. The three-restaurant limit will remain at the centre of the guide's approach, meaning new additions may also require existing selections to change.
